Ingredients:
- 1 whole chicken (approximately 1.3-1.5kg)
- Lemongrass: 4 stalks
- Coriander or kaffir lime leaves: 10g
- Chili peppers
- 1 onion
- Rock salt: 400g
Seasoning:
- Sugar: 4g (1 teaspoon)
- Salt: 4g (1 teaspoon)
- Turmeric powder: 4g (1 teaspoon)
- Chicken stock powder: 4g (1 teaspoon)
- Crushed peppercorns: 2g
- Star anise: 1
- Whole peppercorns: 3g
- Cloves: 1g

Step 1: Prepare the Chicken and Ingredients
Prepare the ingredients:
- Slice the onion into round pieces about 1.5cm thick.
- Cut the lemongrass in half or into 3 pieces horizontally and lightly pound the top part of the lemongrass.
- Wash the coriander or kaffir lime leaves.
- Roast the whole peppercorns until fragrant and set them aside. Be careful not to burn them; just lightly roast.
Prepare the chicken:
- Mix vinegar and salt, then rub it evenly onto the chicken and let it sit for about 5 minutes. Rinse the chicken thoroughly in several changes of water. If you don’t have vinegar, you can use lemon juice mixed with salt.
Step 2: Marinate the Chicken
Seasoning:
- Combine the sugar, salt, turmeric powder, crushed peppercorns, star anise, and cloves. This is your seasoning mixture.
- Gently rub the seasoning mixture all over the chicken, both inside and outside, to ensure even seasoning.
- Let the chicken marinate for 30 minutes.
Step 3: Steam the Chicken
- Evenly spread the 400g of rock salt at the bottom of a steamer, then place the onion slices, lemongrass, and coriander or kaffir lime leaves on top.
- After the chicken has marinated for 30 minutes, place it on top of the aromatics in the steamer.
- Add 1 teaspoon of salt into the cavity of the chicken.
- Steam the chicken for 15 minutes over medium to high heat.
Step 4: Steam and Serve
- Once the chicken is done steaming, transfer it to a plate and let it cool.
- If you want to present your chicken beautifully, you can tie the chicken legs together and tuck the wings into the body.
- Place the chicken back in the steamer.
- Cover the steamer tightly with foil, ensuring no steam can escape.
- Steam the chicken for 60 minutes.
- After steaming, let the chicken rest for another hour. This helps the chicken to develop its flavor and aroma.
- Serve the chicken with a dipping sauce made from rock salt, pepper, and lime juice.
